Snowballs

Ingredients
- 500g icing sugar, sifted
- 250g desiccated coconut
- 125g copha
- 2 eggwhites
- Peppermint essence

Method
- Line an airtight container with baking paper.
- Combine the sifted icing sugar and coconut in a large glass bowl.
- Melt the copha over low heat and let it cool slightly.
- Add it to the bowl and stir it in with a wooden spoon.
- Beat the eggwhites until they form soft peaks.
- Add them to the mixture, stirring them in thoroughly.
- Add a few drops of peppermint essence to taste, then roll teaspoonfuls of the mixture into balls, and put them in the airtight container.
- Store them in the fridge until you are ready to serve or give them as a gift.
