Snowballs

 

  Ingredients
  • 500g icing sugar, sifted
  • 250g desiccated coconut
  • 125g copha
  • 2 eggwhites
  • Peppermint essence

Method

  • Line an airtight container with baking paper.
  • Combine the sifted icing sugar and coconut in a large glass bowl.
  • Melt the copha over low heat and let it cool slightly.
  • Add it to the bowl and stir it in with a wooden spoon.
  • Beat the eggwhites until they form soft peaks.
  • Add them to the mixture, stirring them in thoroughly.
  • Add a few drops of peppermint essence to taste, then roll teaspoonfuls of the mixture into balls, and put them in the airtight container.
  • Store them in the fridge until you are ready to serve or give them as a gift.
