Bob's delicious rock cakes

Bob Lownds has been making his famous – and delectable – rock cakes for over 30 years and here he shares his trusty family recipe.

   

Ingredients

  • 1 1/2 cups corn flakes
  • 1/2 cup castor sugar
  • 1 3/4 cup sifted plain flour
  • 2 tsp baking powder
  • 1 cup mixed fruit
  • 110g softened butter
  • 1/4 cup milk
  • Vanillin sugar

Method

  1. Preheat the oven to 180°C and grease a biscuit tray lightly.
  2. Cream the butter and the sugar in a large mixing bowl, then add the other ingredients.
  3. Mix it all well until it resembles stiff dough.
  4. Put heaped teaspoons on the biscuit tray and bake them for around 15 minutes or until they are golden.
  5. Allow them to cool on a wire rack, then store them in an airtight container.

    Makes approximately 15 biscuits.
