Parmesan and garlic crackers

 

 

Ingredients

  • 30g cheese, finely grated
  • 50g parmesan cheese, finely grated
  • 1 teaspoon garlic powder
  • 1 tablespoon dried, chopped chives
  • 200g plain flour
  • 80g butter, diced into small cubes
  • ¼ rounded teaspoon salt
  • 1 tablespoon water
  • 1 egg yolk

Method

  • Dust a chopping board lightly with flour and set it aside.
  • Knead the cubes of butter and the flour until the mixture resembles breadcrumbs.
  • Fold in both cheeses, then the garlic powder, chives and salt, followed by the water and the egg yolk and stir it to form a dough.
  • Put it on the chopping board and knead it until it’s smooth, then roll it up to form a log about 5cm in diameter. Wrap this in cling film and refrigerate it until it sets firmly, then unwrap it and slice it into 5mm (1/4in) discs.
  • Bake the crackers at 180˚C for about 15 minutes or until they turn a pale golden colour.
  • Once cooked, take them out of the oven and let them cool before storing them in an airtight container.

Makes about 40 crackers
